Reviewed Chili-Corn Casserole
"Loved the idea of this! I had to modify the recipe quite a bit based on what I had on hand (my goal was "what supper can I make without making a trip to the grocery store?"). I did have leftover Texas chili (yummy!), but no corn (fresh, frozen or canned . . . I know!? What's up with that?) so I decided to use a can of chickpeas instead. Also, no polenta . . . but the other reviewer's idea of using cornbread was brilliant! I just dolloped the batter right on the casserole in place of the polenta . . . took a little longer baking, but the end result was tasty! Next time I'll use corn, but the chickpeas were not bad at all.
