"My husband and I both loved this recipe. I had to cook it a bit longer than it suggested, just be sure to test it for tenderness. Will use even more cilantro next time because we love it! Was looking for an alternative to my traditional Mexican rice, and I found it! Thanks!"

"This recipe is totally worth the time it takes to make it. Like other reviewers, we doubled the chicken, but kept the sauce recipe and had plenty of sauce part the same and had plenty. "Delish! I only had mini-corn tortillas on hand, so I double the quantity and used those. Had a several cups of bean sauce left over, and plan to use them for bean dip and to make additional "enfrijoladas" later this week. Agree with others that the same thing can be achieved by mashing the beans or using a hand mixer. Will be making this again,""
