Reviewed Butterflied Cornish Hens with Sage Butter

"This is a nice recipe for cornish hens but needs some adjusting. The sage butter and bacon make the skin tasty and crunchy. Only thing is - the oven is smoking like crazy at this temp. We had to loosely tent the birds and monitor carefully. We did un-tent for a short period to crisp bacon, but had to re-cover due to butter smoking up the entire house - a problem with guests. We lowered temp to 350 - 375 and cooked longer. Birds need additional seasoning prior to basting - add garlic inside or other favorite seasonings - or the meat has little flavor. They ARE tender and moist (cooked to 165 - 170 then rested) - but check out some of suggestions below to enhance flavors (brine lightly with easy salt, white wine added to oven pan, garlic or other spices). Would I make again? Perhaps, but only with enhanced seasoning.... and perhaps on outdoor grill with oven pan. The birds are delicate in the end and need support when removing from pan or grill.
