Any time you're trying to get something to brown or crisp you have to make sure the pan isn't overcrowded or they will steam rather than brown.

These are some of the best cupcakes I've ever had. The cake is moist but does not break apart when you take off the wrapper. The gingerbread flavors are present but not overwhelming. I actually used a lemon syrup with a lemon cream cheese frosting and they worked beautifully with the gingerbread. Thanks Chef Bobby! :)
