Reviewed Rigatoni with Eggplant Puree

This recipe is delicious and healthy. I added zucchini to the roasted veggies.I did not have any rigatoni in the house, but substituted multigrain penne and the nutty flavour of the pasta was a winner with the sauce providing an extremely satisfying and filling meal.This is a definite keeper, the kids loved it and it was easy to make. "
