I loved the flavor of this sauce! It was delicious. My only complaint is that this recipe does not reflect the recipe on the PW website. I prefer my pasta sauces to be generous in proportion to the actual pasta. The recipe here eliminates/substitutes heavy cream and half-and-half. I think I will stick with adding 1 cup of each and letting it reduce...

If you use a really good quality cheese, you shouldn't have an issue. However, I buy the cheap wedges at my local grocery for about $2. The cheese can result in clumps in the sauce if it is not grated fine enough.
