Delicious. Complex and rich flavor and very fragrant. I did use much less of the essence and stock still has a kick to it. They probably forgot to mention the amount of essence. But this recipe is superb and I will definitely use it many times again. I also love Emeril's shrimp stock recipe.

I always buy shrimp with shells and no longer throw them away, and always have the homemade stock in the freezer. I use the ends of the celery that I wouldn't use in the recipes. And I have been adding any herbs that I can find in my garden. What a great way to use up leftovers from shrimp and veggies."
