My Activity

Reviewed Crispy Kale "Chips"

"These were a huge hit! They did not even make it to the table. My kids and I just stood in front of the stove and ate the entire tray. I made sure the kale was completely dry before I baked them, and I did have bake for 25 minutes.
We will make this again and again."

Reviewed Chicken and Quinoa Soup

"This soup was very good. I have four kids and they all enjoyed it. The sour cream was perfect to balance the heat. I also had to add a little water to keep it more soup like."

Reviewed Tomato and Mozzarella Tarts

"This did great. I had no problem with sogginess. And for my non-tomato lovers I used slices of eggplant or zucchini. Also a hit."

Reviewed Butternut Squash Soup with Cinnamon Whipped Cream and Fried Shallots

"Made this soup on a rainy fall day with squash from my garden. All I can say is yum. And I had 7 kids eat everything. I skipped the cream and shallots but look forward to trying them next time.""

Reviewed Layered Zucchini and Ricotta Omelet Cake

"It was fabulous! Of course I only got one bite because my kids devoured it. Will have to make 2 next time.
I used 3/4 ricotta and 1/4 cream cheese to smooth out the texture which we like and I used one jalapeno pepper instead of the other pepper-- only because that is what was fresh from the garden. I think next time I will add even more veggies!""

Reviewed Curried Cauliflower and Carrots

"Being a huge fan of curry and cauliflower already this dish hit all the right notes, but it was the sweetness of the red onions that took it to a whole new level. Loved it and plan on making it again and again..... no date required."
