"This recipe was delicious - getting rave reviews. I subbed honey for agave, didn't use the jicama or bay leaf, and sauteed the onions in non-cooking spray to cut out 3 tbsp of oil. Reviewed Roasted Potato Leek Soup

"This soup was amazing and received rave reviews. I made it today because I picked up some gorgeous leeks at the farmer's market and was searching for recipes to use them in. Using an immersion blender versus the food processor made it a very easy dish.

Also, be sure to start working on the crispy shallots as soon as you begin roasting the veggies! You should have plenty of time to chop and fry the shallots while everything else is roasting in the oven. They gave the soup a gourmet look and great texture and flavor.

Reviewed Classic Tortilla Soup

"This was a great soup! So delicious on a cold night. I could not find dried New Mexico chilis, so I substituted with a dried California chili. As the soup was simmering, it didn't have quite enough spice, so I added a few dashes of Garlic Tabasco sauce....it gave the soup a nice kick in the background. I also added shredded up leftover meat from a rotisserie chicken. I've always been a little afraid of frying at home, and these tortilla strips were my first experience. They were very easy and worth the effort. I garnished the soup with chopped cilantro, avocado, cheese, and the tortilla strips....it looked very gourmet when everything was assembled. To use up some of the extra corn tortillas....I cut them in triangles, fried them up and sprinkled them with sugar and cinnamon...then served those with a scoop of vanilla ice cream. I definitely recommend this dish!

Reviewed Spicy Baked Chickpeas

"These are a great snack! I made half the recipe (1 can of garbanzo beans, and will probably be making them again next weekend.

I definitely recommend baking these in a 400 degree oven for 10 min before coating like another reviewer recommended. I also added 1/2 tsp of garlic powder to the recipe, and baked them for about 35 minutes to ensure they all turned out crispy.
