Reviewed Lentil Soup with Beef
"Easy & Excellent! Thanks, Giada, for another yummy recipe. I did manage to exercise a modicum of self-control so added, only, 1 Bay, 1/2 TB. tomato paste and 1/2 tsp. thyme. The second time I doubled everything and gave away to neighbors plus friends who said it was the BEST lentil soup they'd EVER had!!
Reviewed Sweet Potato Pie
"Better than Perfection! This year was the first time I ventured into Southern Cooking by preparing this receipe and it's truly excellent. David also has a great recipe for cauliflower baked in white wine which I prepare often. This sweet potato pie will become a permanenr part of our Thanksgiving celebration and I hope you'll add it to yours!
Reviewed Italian Stuffed Meatloaf
"First time I prepared this, added the 1/4 cup Worcestershire but the taste was too pronounced for my liking so, the next time, I added only 2 TB. and found it had a better flavor. I also substituted the Cheddar with Provolone and plan to prepare again with same changes.
Reviewed "French" Dressing and Iceberg Lettuce Chopped Salad
"This is an excellent salad dressing although I made a minor change by reducing the 1/3 cup of sugar to 1/4 cup. It's very reminiscent of the '50's and '60's ... am sure you'll like it so give it a try!
Reviewed Dragon's Breath Chili
"As I changed this somewhat, didn't feel right about giving 5 stars. I left out the red bell peppers, the Italian sausage and the kidney beans (one of 3 foods I dislike)- used pintos and black beans and added half a pound of my homemade chorizo. My first time to put beer in chili and thought it was a very good addition. To save time, two nights before serving this, I combined all spices, prep'd the chiles and served lotsa' bacon with eggs for dinner! As the flavors needed to meld, cooked it the day before serving ~ it 'felt right' after 2-1/2 hours and our dinner guests thought it Fabulous! Thanks, Guy
Reviewed Classic Cobb Salad
"Loverly! (as are so many of Emeril's recipes). I've sometimes had this served on iceberg but prefer the bibb. It's always nice to have a terrific go-to salad when friends comes to lunch and one friend, to whom I've served this salad 3 or 4 times, now says she'll decline my next luncheon invitation if I don't plan to again serve this! I'm semi-disabled so, don't work outside home.
I enjoy the company of my cats and, of course, cooking. Favourite cookbook has been o-o-p for many years but have found it available from used book stores: Gourmet Cooking for the American
Kitchen by Myra Waldo as well as my set of Cordon Bleu cookbooks (from when I was a C.B student, in London, 30 years ago!).
In addition to cooking, my interests are Bible study, classical music, reading, politics.
My, singular, pet peeve would be people who hear but do not listen!
Favorite Foods
Favourite dish to cook is a difficult one ..I suppose any dish with a wine reduction gets my vote!
Am not, yet, famous(!) but created a lamb shank dish with, of course, a red wine reduction.
Favourite restaurant in NM would be Geronimo, in Santa Fe.
