"WOW - crazy good. Agreement on the salt - 3 TBSP is way more than needed. What we did was put a remix on the recipe. I took fresh chicken and ground it in my food processor - then added in the remainder of the recipe - reducing the salt to 1 tbsp. AMAZING. I will not be buying store bought sausage again.
