Reviewed Layered Tortilla Lasagna
"I made this for a crowd for Christmas Eve, and it was a huge hit. Everyone wanted the recipe. I had vegetarian guests, and this was perfect, and sooo good.
Love Rick Bayless, have 2 of his cookbooks, and this is in neither. I only found it here.
One guest is allergic to garlic and I left it out, made RB's Quick Cook Tomato-Chile Sauce for the salsa, and it was superb and didn't miss the garlic at all.
I am making this again, as a half recipe since this makes a huge quantity.
Reviewed Vegetable Meatloaf with Balsamic Glaze
"This meatloaf is amazing. I thought my old recipe was good, but this is terrific. The vegetables make it very moist and juicy, and the glaze is great. Who knew catsup could taste so good!
I like to make a new recipe exactly as written the first time, and then change what doesn't work for me. This needs no changes, it's sooo good. But I do want to try it with meat substitute for vegetarian friends, and I bet that works well, too.
