Reviewed Chipotle Chicken Fajitas
"Very yummy! I have tried many fajita recipes and even the packets, but I feel like the chipotle in adobo REALLY makes a difference!! I cooked one chicken breast (instead of thighs) and used roughly 1.5 chipotle peppers in the adobo sauce. It was so spicy and so delicious!! I also substituted cilantro for oregano because I didn't have any oregano on hand. It was seriously so tasty and easy to make. The hardest part was cutting up all the bell peppers, onion, and chicken. If you pre-cut all the veggies and meat the night before, you can have dinner ready in 10 minutes flat!
