i have died and gone to gingerbread heaven! i am a bit of a gingerbread snob and this recipe is absolutely perfect--thanks emeril! the spiced creme anglaise sets this moist & tasty cake over the top. it really is a must. i have served the creme anglaise 2 ways:
1. i transported to a large thanksgiving dinner -made the cake in mini cupcake...

this is a fantastic gratin! i sliced my potatoes in a food processor as well. i was concerned about the size since it was not specified and i don't have a souffle dish. i used a large corning ware dish (10x10x2)and it just barely fit! i set it on a cookie sheet in case the it bubbled over, but it didn't. i baked alone at requested temp. for 1.5 hours....
