Reviewed Tuscan White Bean and Garlic Soup

"I had high hopes for this soup, but when I followed the recipe to a tee it was quite bland. I ended up adding quite a bit of salt to rectify the situation. However, I will say it makes a great base for a creamy soup. So many creamy soups use tons of butter and flour and cream; this one saves you all the fat and carbs by using beans. I added broccoli, freshly grated parmesan reggiano and some poached chicken cut into chunks. After that it made a very satisfying soup. I think mincing and sautéing the garlic with the shallots would help the flavor as well.
