I used 6 skinned chicken thighs, all visible fat removed. Added the extywra cayenne - too spicy for me, sorry. Chicken was moist and crust was crunchy. I will make this again, but will be tweaking the spices. I think it could use some garlic powder, hot sauce instead of cayenne, and it needs a fresh herb - sage? Anyway, its a fabulous method...

I must have measured the milk wrong because the sauce was way too runny. I had to thicken it with an egg yolk and added parmesan cheese directly to the skillet instead of just sprinkling it on top. Also the flavor was sort of bland so I cooked up some italian sausage and added it to the mixture.

The seasonings were just right and that's been a long time problem for me. I added a cup of good carbernet and a cup of beef stock. Also threw in some baby portobellos cut in 8th's.
