First, I'll start by saying I love FN mag's dinners, but this was one of the few that was disappointing. This was very time consuming for a stove-top mac and cheese sauce. Soooo much chicken broth!!!! Wow. I recommend Alton Brown's version and adding salsa, chicken, and chili powder if you still want that southwestern effect.

This was very quick and easy to prep and throw together! It packed a big punch of heat (with the cayenne) and flavor for a crackpot meal. Be sure to use the correct rice and a good Cajun seasoning.

Very easy and scrumptious! I did not find it neccessary to move the skillet to the oven after the cakes were golden brown on both sides. They were totally heated through and I did stick to making them 3/4 of an inch thick. My skillet was smaller, so I was only able to cook 4 cakes at a time."
