I was very disappointed in this one. The sauce tasted more like spaghetti sauce than enchilada sauce even after doubling the number of dried chiles. As the sauce goes, so do the tacos - bland and boring. I'm a huge fan of Guy's recipes, but this one is not a keeper."

This was amazing stew. I added some garlic, celery and a bay leaf. Used only 1 cup of wine and an entire 14-1/2 ounce can of petite dice tomatoes. I had an 8 ounce package of Haricot Vert which I added at the end. My family ate it up - there wasn't a drop left.

This was perfect gravy! The best part was making it early, before the last minute frenzy. I didn't have fresh sage or thyme, but it was wonderful with dried. Used a raw turkey wing, also doubled the flour for the roux so it would thicken better. This is now my go-to recipe for gravy.

These were amazing. I had cippoleli onions which I substituted for pearl. Only had 8 ounces of onions so I cut the sauce recipe in half. Didn't have fresh thyme so I used a sprinlke of dried thyme leaves. Next time I'll have plenty of onions - the dish was AMAZING!
