Reviewed red pepper mayo on black eyed pea cakes

This is a great basic fritter recipe to get you started with more customized cakes. I subbed minced jarred pimiento peppers for the red bells, added a small, minced and saut�ed yellow onion to the pepper mixture, and subbed panko breadcrumbs for the cornmeal. My guests loved these, especially with the "pimiento" mayo.

The batter was very thick, so think I was afraid I had done something wrong. This baked up tasty but grainy, probably due to the cornmeal. The best part was the "crust" that formed on top during baking.
