Reviewed Italian Wedding Soup

"Holy Cow - this is AWESOME! It tastes exactly how you would expect Italian Wedding to taste in your favorite family owned, old school Italian restaurant. I was so blown away with the results - and it was so simple! The only time consuming thing was rolling all of the meatballs because I don't like them to be too big when they're in soup.

I used escarole because I personally prefer it. I cook it as is for a light starter, or if I want it to be a meal by itself I'll add a little ditalini.

Can't say it enough - this one is an absolute winner!
