I have this in the oven right now and it smells amazing! I have made this many times and it is one of my family's favorite meals. My kids don't usually like eggplant so I replace that with mushrooms. I also use whole wheat pasta, and sweet Italian turkey sausage for a healthier version. It never disappoints.""

I have made this several times but usually use a whole pork loin that I purchase when they go on sale. It is so easy and particularly good when you are cooking for a crowd. I made this for a homecoming party (from Iraq) for my son and my family and friends loved it! "

Unfortunately I can't rate it. I was trying to save on calories and used fat-free half&half. My sauce curdled as soon as I put the lemon juice in it. I finished up the recipe anyway because everything else was prepared. It tasted just fine, but looked pretty disgusting.

I will recommend not trying to reduce the calories on...

My daughter and I could not get over how delicious this was! The only change I made was to use cilantro instead of mint in the mayonnaise. I also used tilapia, and while it flaked quite a bit, we enjoyed the texture. The kids all took the recipe home with them and we will all make this again.
