Reviewed Beer-Braised Rabbit (Or Chicken) for the Crock Pot

"Tastes so good! Followed the recipe but didn't have chili sauce, used a tbsp of hot sauce... turned out just right. Chix was moist and so very flavorful. I used Guinnes Black Lager and even the cold left-overs had that subtle flavor for my salads at work! This recipe is a keeper! Thanks for sharing."

Shared Recipe Chicken Cheese Casserole

"Flipping through some 1973 recipe cards, I just knew I could do better than what I was seeing, so here it is. Made it for dinner and was great! No magic for this, just follow along. You will need an electric mixer. Serve with a salad and desert or take to your next pot-luck. Enjoy!"

About Me

Both grandmothers came from the Midwest and cooked from scratch. So did Mom, naturally, I am trying to follow in those footsteps! One thing Mom didn't do was cassaroles. I love experimenting with them and have concocted some very good ones. Between the cassaroles and the slow cooker, weekday meals are easy when I come home from work, but I'm always on the lookout for new recipes. My cats think something is wrong if I'm not in the kitchen or on the computer (they even like some of the meatier scraps they are offered once in a while)!

Favorite Foods

I can't live without rice, pasta, onions, garlic & cinnamon! There's gotta be a recipe in that, somewhere...

I make the BEST BBQ ribs on the West Coast, at least everyone that eats them says so (and I agree), but my all time favorite is a veggie quick dish I can rustle up and it's real comfort food for me.... instant rice and oriental blend veggies.

Put half the pkg. of veggies in a large sauce pan. Add the recommended amount of water from the rice box for the instant rice you will use. Bring to a boil and then add the rice, stir, cover and let sit. Add a ton of butter, let melt and chow down. It takes as long to cook as it's taken me to write this!!

When a special occasion arrises, we go to Glendale, CA and eat at the Tam O'Shanter. They have the world's best prime rib ever (and the creamed spinach is to die for, too).
