Putting up the water for basil first when that could be done while the potatoes are cooking is a waste of time. Also, you don't want to put potatoes in boiling water. With these changes the potatoes are great and take less time. ""

Excellent - who would have thought chocolate would be great in a rub! I also made a pan gravy - 1 cup unsalted beef stock, chilled, mixed with 1 tbsp corn starch. Put that in the pan, scrape up the brown bits, add 1/2 tsp kosher salt, 1/4 tsp pepper and 2 tablespoons half and half. Just let it cook and thicken and you'll have a great pan gravy to "
