If you had to modify the recipe that much to perfect it, you shouldn't give the original recipe 5 stars. This sounds like a new recipe all together.

Mediocre at best. Spent half the day making this and half the day trying to figure out how to fix it. There are definitely better, more authentic bolognese recipes out there.
