Reviewed Chocolate Cupcakes with Chocolate Mascarpone Filling and Zinfandel Buttercream
"I loved the design of these cakes, but the liquid amounts in the recipe made it so thin that they wouldn't rise. So I added an additional cup of flour to the batter and they baked up nicely and very light, took about 20 minutes to bake. I used only a 1/4 cup for the coffee instead of 3/4 and I used cake flour so I don't know if that would have anything to do with how thin the batter turned out, otherwise it was a good recipe.

"I LOVED the cake and the Muscat coconut raisin filling was THE BOMB! Only problem I had was with the Parsley buttercream...didn't look like it did on cupcake wars. The pureed parsley mixed with the gelatin and then combined with the buttercream...I got this not so appetizing looking stuff in my food processor...it tasted good but it didn't hold up well at all. Once I put it all together the buttercream began to separate. So...I just made my own version and the buttercream turned out great! But again, everything else was DELICIOUS!

I'm a self taught baker operator and owner of "T's Sweet Presentations" (formerly: Teresa's Oatmeal Overboard") . I'm an on online baking company trying my BEST to be selected to compete on "Cupcake Wars" :-). I take notes all the time, my husband records the show for me and nobody had better disturb me when I'm watching.
