"I live in Peru and ginger ale is not in every market so I substituted Sprite. I also used about 1 tsp. of fresh grated ginger. Followed the rest of the directions and got the best tasting carrots I've ever eaten. The Sprite reduced to a nice syrup perfectly and the carrots were tender not mushy. I'll never make them any other way. Super easy too. ""

I love to cook and bake. I have recently started a little cupcake business from my home along with my wife called, The Cupcake Company. I'm originally from Santa Monica, CA but have been living in Lima, Peru since 2006.
Before moving to Peru I lived in the Dallas-Ft. Worth area and was a huge fan of the Food Network Channel.
I like trying new recipes and experimenting and I really enjoy cooking and baking for others. I enjoy both simple and complex foods and especially comfort foods from both the U.S. and Peru.
