Reviewed Breakfast Enchiladas with Red Sauce
"A lot of Sunny's recipes sound fantastic, and I can't wait to try them. However, when I came across this recipe while searching for the Egg Cup recipe, I had to chime in. Raised by a Mexican from Mexico on traditional Mexican cuisine, with all due respect, this is not enchiladas rojos. This is tomato sauce. True red sauce is made with red chile and enchiladas are always, ALWAYS made with corn tortillas. Flour tortillas make burritos. A better name of the dish would be Baked Breakfast Burrito Casserole with Spicy Tomato Sauce.
