Reviewed Breakfast Enchiladas with Red Sauce

"A lot of Sunny's recipes sound fantastic, and I can't wait to try them. However, when I came across this recipe while searching for the Egg Cup recipe, I had to chime in. Raised by a Mexican from Mexico on traditional Mexican cuisine, with all due respect, this is not enchiladas rojos. This is tomato sauce. True red sauce is made with red chile and enchiladas are always, ALWAYS made with corn tortillas. Flour tortillas make burritos. A better name of the dish would be Baked Breakfast Burrito Casserole with Spicy Tomato Sauce.

About Me

When you see multiple posts of the same review by me, it's because the Food Network website does not wipe clean the input text box once it does post my review. So, being new here, I thought the lingering text meant it did not post successfully. So, I hit Post Review several times. My apologies!
