Made this tonight and it turned out great. I only had three loaf pans so I made three large muffins with the rest of the batter. I don't like broccolini so I substituted 2 bell peppers (one yellow, one orange). I just large diced them. I also substituted olive oil for the butter at the beginning, and then added just 1 T. butter at the end. Fontina was perfect for this recipe.
