This is fabulous! Not a huge ricotta-from-the-store fan so I was reluctant at first, but curiosity got the better of me. I am thrilled that it did! My husband, a cook in his own right, was awed - and hesitant, but could not be stopped once he tasted it. We used it like butter on the pop-overs, and on flat bread when we ran out of pop-overs. I"

These were awesome, and so easy - and quick! I did add 1/2 tsp. of vanilla to the sauce of the apples while they were cooking and liked the aroma it added as well as taste. Loved the combo soft and crunchy. They really were perfect with the pop-overs and ricotta!"

We loved this. I forgot to toast the fennel, but I crushed it a bit so the flavor came out anyway. I did reduce the heat a bit, cutting the red pepper and cayanne - but only because of a previous ulcer!! I skipped the eggs, but we had the fresh ricotta, pop-overs, and apples and it was a fabulous brunch. My husband is still talking about it!"
