The flavor was awesome. I used cheddar and Gouda, because I couldn't find Gruyere. Gouda is a wonderful melting cheese. These are fast, easy and delicious. I make them for any family get together, and they're always popular. I mix and match different cheeses (ham, turkey, Swiss or Gouda cheese) in addition to the pastrami and provolone. I also use French bread if I don't have sourdough.
