I had reservations about anything with boxed potatoes, but this has become a family favorite. I nearly doubled the recipe with very few minor changes, I used 2 envelopes of potatoes, 1 C of cream, and 6 eggs. The texture was light and fluffy, the taste was delicate and delicious!
