What an absolutely delicious pie. The custard turned out beautifully; creamy, silky and smooth. The only problem I had was that the time for baking the crust is way, way too long. You know a dish is good when it's supposed to serve 4 and it's devoured by 3 (including a 6 year-old). The pork was tender, juicy and full of flavor from the rub and sauce. We made these alongside Pat Neely's Buttermilk Pancakes with Vanilla Bean-Berry Syrup and they just didn't match up. The syrup is very basic, much like Mrs. Butterworth's. The hoisin glaze for this is outstanding. The only concern I had was the amount of water used in the baking sheet. 1/4 cup is barely enough to keep the glaze from burning on the pan. I recommend 1/2 cup instead. Otherwise, it was wonderful.
