Reviewed Eggs in Baskets

" I cooked these for my family for Christmas and they were definitely as good as they looked!!! I did make some additions, as I usually do. I put provolone and parmesan on top of the eggs and it created a gooey and crispy cheesy top, very good! The eggs came out a little over done (my fault) because I wanted the cheese to be bubbly and golden brown. I also made scrambled eggs for two for my brother, just add those when you broil the cheese so they're not dried out. The potatoes are where I had an issue, but my brothers and I have already come up with ways to make them better. Mine came out perfect on top (like golden, crispy hash browns) but the bottoms were grey, soggy, and really greasy. I also thought they had no flavor towards the bottom. Next time, we're adding bacon to the potatoes along with onions, bell pepper, more parmesan, less butter, and a thinner layer of potato. Otherwise, an awesome recipe worth making. I will definitely be making this recipe again!

Reviewed French Toast with Caramelized Pecans, Strawberries and Cream

"I made this for my family for Christmas breakfast (just finished it actually) and it was phenomenal!!! We couldn't find brioche (we shopped for it yesterday) so we used a ciabatta loaf. I was weary when I ate an end piece as I was cutting and it was super chewy, but everything turned out fine. I let it stale out overnight and the pieces were a little less than an inch thick. The egg mixture was really flavorful and paired nicely with the cream cheese, strawberry, and praline topping. I'm not a huge fan of syrup, so I order something similar to this every time I go to restaurants for breakfast (nothing better than strawberries and whipped cream). I am a HUGE fan of this recipe and will continue to make it. This recipe was super easy and really, really delicious!!!

Reviewed Butterscotch and Black Pepper Baby Carrots

"Caveat: I made this recipe for a family Christmas dinner, adjusting/multiplying the recipe to feed 25. My rating is based on those adjustments until I make the recipe again.

These carrots were delicious, and so easy!!! Even the four pounds of carrots I used (see caveat) turned out fantastic! They were lightly sweet and had the great flavor of pepper without the kick (some in my family don't like spice). I did, however, make some adjustments as I cooked (again, see caveat). I added some extra brown sugar for extra sweetness. I also added extra black pepper because I love the flavor of black pepper. On top of that, I snuck in some cayenne pepper (about 1/2 tsp for my big order, I'd suggest no more than a 1/4 tsp for the standard recipe). Everyone loved this take on stewed carrots and I thought they were fantastic! I will definitely be making these again!

"Caveat: I made this recipe for a family Christmas dinner, adjusting/multiplying the recipe to feed 25. My rating is based on those adjustments until I make the recipe again.

I truly loved this recipe! It's super fresh and easy! However, I would make some adjustments. I like a little more "umph" in my salad so I added extra vinegar and put in 1/4-1/2 cup of lime juice. I also added some extra salt to back the flavor up a bit. Because I wanted the flavors to marry, we left it in the fridge overnight. The flavors married perfectly, but I will be leaving the snow peas out next time and add them right before serving as a garnish (they turned and ugly brown/green). We also added about 2 cups of halved grape tomatoes, and they were a great addition. Next time I'll be adding some feta cheese as well.
Overall, this recipe is one of my favorites and will be a staple of mine!
