Wow. I made this tonight and it was delicious! The meat was so tender and juicy and I used the drippings to make a wine sauce to pour over the top. I don't know if using an organic chicken made a difference, but it was certainly the best roast chicken I've ever eaten!

What an amazing recipe! The nutmeg is genious and the croutons really add depth. This is definitely going in our weekly soup rotation!
