Reviewed Southern Cornbread Stuffing
"The bread MUST be oven dried (cheap white bread). Jiffy cornbread does NOT work as good as Paula's cornbread recipe. Add a jar of Heinz Roasted Turkey Gravy (this is the secret). Use 1 TBS of rubbed sage (not ground) and 1 TBS of a poultry seasoning that has thyme and marjoram (I use McCormick brand). These spices are NOT optional. Coursely chop the onion and celery and measure according to recipe, then finely dice before sauteing. Saute onion/celery until translucent (important). Do not use the amount of broth the recipe calls for. Mix everything minus the eggs, adding broth until it's batter consistency. If it needs more salt, add chicken boullion.
