Reviewed "Instant" Pancake Mix

"I keep a batch of this mix on hand. Better than boxed any day and once you've made it a few times, putting the ingredients together is old hat. Just a great mix to have.

Oh and if you let them sit overnight in the fridge, the air bubbles will go away and you can make some wonderful crepes out of them. Just a great mix!

Reviewed "Instant" Pancake Mix

"This is the most wonderful and versatile cake mix I've ever used. Hubby says it's better than the box brands any day and better than what he gets in a restaurant. I usually 1/2 the wet ingredients to make enough for just 2 people and can easily make "plain" pancakes for him and a more jazzed up version for myself. Today I mixed 1 small baked sweet potato w/cinnamon and nutmeg (to taste) with a small packet of raw sugar and dropped it by 1/4 tsp onto one side of my pancake. when I flipped it, the sweet potato toasted up nicely in my skillet. It was incredibly yummy with just a small amount of pure maple syrup :)
