Excellent salad! I did not have red onion so I used a small shallot. I also added avocado and hard boiled egg. Another excellent dish from Ree. Will definitely make this again. My changes were that I used cremini mushrooms, added large diced onion to the shrooms, and pepper jack cheese. I also toasted the panko crumbs with butter, parsley, and when cooled added more parm then sprinkled on top before baking.

This was so good and easy. Way better than the fast food versions. I have made them twice now. Once with Canadian bacon and once with bacon. Both very good.
