This is wonderful and very easy to whip up in just a few minutes. I make it whenever I have a couple of strips of leftover cooked bacon. Today I made it using leeks instead of onion, because I needed to get rid of the leeks. I don't use canned tomatoes anymore due to the BPA issues, but a few chopped fresh ones worked just fine."
