"While this recipe was definitely on the quieter side of flavor I thought it was a decent easy dinner night meal. Unfortunately in a pinch I couldn't find GF soba noodles (all mine had wheat flour added) so we just did it over brown rice. I think I would double all of the ingredients, minus the water, and add cornstarch to thicken up the sauce. Pro"

"These pork chops were a big success, however for me personally it felt like they needed a bit of acid. I guess the rub was a little too earthy for me. Also I would saute the onions separately as they caused a decent sized jam-up in the pan."

"This tilapia was a hit in flavor. I made it with Bob's Red Mill GF flour because of my DH celiac. Next time I think I will use dried herbs though. As much as I love the fresh, they just didn't adhere to the fish with the flour at all."

"Currently making this. Looks beautiful however the smoke point on the olive oil has filled my house with a haze. I think next time I will work with Safflower oil instead.

After completion I decided I would add some rosemary and thyme to the mix on the veggies, and perhaps, as someone else stated, a little Emeril's Essence. Overall very tasty tho"

"This was tasty and satisfying. Not overly spicy, so I think you could amp it up depending on your Cajun spice blend. Served it over Vigo Cajun Jambalaya Rice. Definitely makes enough to feed a small crowd."

Reviewed Chicken Enchiladas

"This wasn't half bad, but not my favorite. I would definitely half the cinnamon as that was the only spice I could smell/taste. Definitely be careful when broiling the cheese as my oven burned it in less than five minutes. I agree with previous posters who nicknamed it "Mexican Lasagna" as it basically is. ""
