Love this soup. So delicious and so easy to make. Absolutely need the crema/sour cream, avocado and the queso fresco if you want to achieve soup nirvana. I added some rotisserie chicken and some frozen corn for a little substance. I like a bit more heat so next time I'll figure out how to spice it up without altering the favor too much. Perhaps...

Very good. Very easy. I substituted poblano peppers for the green, yellow and red peppers. Not only do I prefer poblanos, they are cheaper. I used boneless chicken breasts and they were a bit dry. I should have cooked them less before adding to the rice mixture. Live and learn. This will definitely become part of the regular rotation.

Muffins were very good and easy to make. However, I wasn't knocked out about the Mexican chocolate as it was grainy and crunchy. Since I have a number of the chocolate disks left, next time I will chop the Mexican chocolate very fine. Great sticky buns but what a mess. Be prepared to disconnect your smoke alarms because the butter will overflow into the oven and cause a major smoke fest. They were terrific but not worth cleaning the ceiling.
