Reviewed Banana Bread

"Made this yesterday with 3 medium sized bananas instead of 2, and a few more walnuts. Absolutely wonderful! But a big "caution;"this bread is more than done in 1 hour. Don't cook it longer or it will dry out."

Reviewed Refried Beans

"I enjoyed these beans, but next time I'll use better pintos. I used organic pintos from Trader Joe's. They didn't taste or smell right and were stuck in the can like paste. I wouldn't recommend them. Aside from that I added a few tablespoons of fresh salsa and stirred it into the beans. It gave them just the right amount of "kick." I'll make these again with a better grade of pintos.

Reviewed Mexican Rice

"I read the reviews describing this recipe as "bland." So I improvised a bit and used half chicken broth and half water for the liquid. I also used a can of diced tomatoes with green chilis in place of the fresh tomatoes. The flavor was wonderful, but the consistency was "so-so." Came out like risotto instead of light and fluffy. Also, the only rice I had in the pantry was medium grain. Next time I'll try it with fresh tomatoes and long grain rice. I enjoyed the flavor well enough to give this another try.
