Very easy and very flavorful. My stove has 'issues' so it took a long time before the rice was done - just keep checking it and add liquid if needed. Hubby loved it. Finally, a way for me to eat squash! I was never a big fan until now. This is a great recipe. The whole family loves this; I have already made it several times and just found this recipe recently.
