Reviewed simple perfect enchiladas

Red enchilada sauce literally takes minutes and few ingredients (chicken broth, chili powder, flour, seasonings, oil) to make and tastes so much better than canned. I also prefer plating enchiladas and I roll them and heating the plates, rather than doing it casserole-style. They hold their shape and have a much better texture.

I didn't have (saltine) crackers so I just used toads (little, not-quite-round crackers for soup).
