Made this for our July 4 BBQ. Substituted baby spinach for the arugula, craisins for the dried cherries, and feta cheese for the ricotta salata. We also cut back a little on the olive oil, and then chilled the salad until dinner time. Everyone really enjoyed this. It was refreshing and very tasty. It went well with all our grilled foods.
