Delicious summer soup. Couldn't be easier to make. The lemon juice makes the soup pop and the flavors meld together perfectly. I used slightly less red onion and cream and omitted the shrimp altogether. Great recipe that doesn't even use a pot (just a big bowl and a food processor). How Easy Is That?"

So simply, so tasty. I used very juicy lemons and less oil than required (some where between 1/3 and 2/3 of a cup). I paired it with Giada's Italian Caesar Salad with Polenta Croutons, since that recipe also contains fresh lemon juice in the vinaigrette. It paired perfectly. Chill a bottle of white wine and serve with this dish. Perfect! "

4 1/2 stars. Love this soup! I just posted it on my blog. I used the left over leek tops in a stock instead of throwing them out. I loved the texture the crispy shallots gave the dish, but a lot of them got burned-- even though I only fried them for 15 minutes on the lowest possible heat. Any suggestions on how to get those shallots perfectly...

A great and easy way to make squash-- the almonds and cumin add something more unique. I saw a lot of comments regarding the squash skin. I found that if you leave it on, cut the squash in 1/2 inch cubes (or just a bit smaller), after one hour the skin is soft and delicious. Nice way to get some good vitamins!

Fantastic, simple and flavorful recipe. The salsa verde recipe yields 3 cups so I had plenty left over, even doubling the amount I used in the Baked Eggs recipe (2/3 cup). This would go perfectly with chilaquiles, crema, and queso fresco. I also used some of the salsa verde to make an omelette, which also had Gruyere cheese. Delish!
