Best oven fries I've ever made!. I used 2 large baking potatoes, cut in half, then in half again, then 2-3 wedges. After soaking and draining the potatoes I let them dry on paper towels while I worked on prepping the rest of the meal, this is an important step so DO NOT SKIP!
