I think it is a matter of taste. I halved the recipe and used a 1/2 teaspoon of cayenne, and we were perfectly fine with it, but we both adore hot, spicy food.

I adore this recipe! I used one large avocado and halved the recipe except for the lime juice. I used cowhorn peppers rather than jalapeno, because I just plucked one from my garden. Honest to gosh, I forgot to add the tomato, and by the time I remembered my husband was finishing off the last of it. The batch did not last two hours from the time...

Excellent recipe. Because I ran out of time to make this, I used Swanson's Seafood Cooking Stock augmented with white wine, rather than making the stock listed in the recipe. I left out the crab and scallops, and just used shrimp and grouper belly and cheeks from the grouper Hubby caught last week-end. My husband is super picky about seafood. ...

Excellent recipe. I used corn flake crumbs instead of panko, only because it is what I have in the house. I did not realize that the chicken was supposed to sit in the buttermilk for 4 hours, so it only sat for one. I sprayed the foil lined pan with Pam, then turn the chicken over 15 minutes after cooking. I also used chicken breast tenders. ...

Like others, I substituted the fish stock with chicken stock, and added a dash of fish sauce. I also used diced tomatoes instead of whole tomatoes. And I kicked it up a notch with jalapeno. I let it simmer a long time until it reduced, then added the shrimp. Excellent flavor and easy recipe.
