I needed a cheesecake recipe that called for cream cheese, ricotta, and sour cream to use up the near expiration dairy in my fridge. I don't use artificial sweeteners like Splenda, and though I'm a carb watcher, I like my sweets to be authentic. I subbed an equal exchange of organic sugar for the Splenda, and it came out fine.
