Reviewed Lemon and Garlic Roast Chicken

There is not a better chicken roasting recipe than this one. I've prepared this dish so many times and everyone goes on about it and at the end of dinner, people commented on how much conversation we had about a chicken.

We made this recipe to the T. While delicious, The flavor between the tart lemon and salty olives is extreme. We would cut down the lemon. We would also add some herb, probably thyme or oregano, to bridge the lemons and olives. Try this recipe. "

We made this dish to the T. It is probably the easiest polenta to make in that it doesn't require constant stirring. Pop it in the oven and stir every 10 minutes -- TERRIFIC! This is delicious and easy to make. I used bacon instead of pancetta. I also took the bacon out when it was cooked and held to the side to use as a topping when serving the soup. This way the bacon stays crispy. Everyone loves this soup. YUMMY!!!
