"I have been making this recipe since I saw the pickling episode years ago. I make it whenever I have leftover baby carrots at the end of the week. The only changes I've made to it is I use half the sugar and a little more dried chilis. It is a great snacking veggie, and antipasti appetizer."

About Me
Back in 2000, I was overweight and a disaster in the kitchen. In 2004, I turned it all around by learning to cook on the Food Network from Alton Brown, Rachael Ray, Bobby Flay, and Emeril Lagasse. I not only lost weight, but reshaped my image among my friends as a home gourmet. I found a love of food, cooking, and lost weight too! It's the new American Dream.
I started a cooking blog called ShortcutMenus.com, with emphasis on easy to cook meals and small serving sizes geared towards couples and singles. I find too many recipes focus on large serving sizes, or group style meals. This was daunting to me as a single, career professional, and was a barrier to learning to cook. Traditional recipes would lead to days of leftovers, which would end up as food waste. My recipes are simple, and designed for small servings.
Favorite Foods
My cooking style is along the lines of my Food Network heroes: Bobby Flay and Rachael Ray. It is an asian/southwest fusion, reflecting my asian heritage and growing up in the southwest United States. As a career professional, I didn't have time to spend hours in the kitchen, so I learned to cook recipes in 45 minutes or less.
